Corn Salad

This is a yummy side dish we often have with chicken drumsticks or a BBQ. It has just the right combination of sweet (corn kernels) and salt (feta). It really doesn’t need any dressing at all, which may sound strange, but if you leave it to ‘marinate’ for at least half an hour, the juices of all the ingredients combine to keep it moist and flavourful. If you wish you could probably add a splash of extra virgin olive oil and red wine vinegar. This is a dish my 3 year old really likes!
2 420g cans corn kernels
1 punnet cherry tomatoes, halved or quartered
1 200g packet of reduced fat feta cheese, cubed
Half red onion, finely chopped
Handful continental parsley, chopped
Salt and pepper to season to your liking
Toss everything together in a bowl and set aside in the fridge for at 30 minutes to an hour. Enjoy!
