Penne with chorizo and broccoli

Forgive me readers for I have sinned . . it has been one month since my last post. Why? Because food is not fun for me at the moment and hasn’t been since I discovered I was pregnant! Well, just before 7 weeks anyway. Which means no more watching cooking shows on TV, no more buying foodie magazines and no more cooking. Thank god hubby is willing to take over in this department.

I am now almost 15 weeks and slowly getting back into cooking. This pasta dish is one we’ve made several times and really enjoy. Little man is now two years old and for some strange reason is now eating broccoli and simply loves all types of sausage – chorizo included if its not too spicy, so this is a good dish for a toddler.


Serves 4

2 chorizo sausages, thinly sliced
1 clove garlic, thinly sliced
2 cups broccoli florets
500g packet pasta (I used mezze penne which is penne cut in halves)

Cook the chorizo in a large fry pan until browned and crisp. Add the garlic and the broccoli with a little glug of olive oil until the garlic is fragrant. Add two tablespoons of water and pop the lid on the fry pan to steam the broccoli.

Meanwhile bring a large pot of salted water to the boil and then add the penne. Cook until al dente, drain and then throw back into the pot. Once the broccoli is cooked to your liking, empty the entire contents of the fry pan into the pasta and stir well. Add salt and pepper and more olive oil if needed.

Serve with grated parmesan.
